Baked Pears and Apricots
2 mediumripe bosc pears , peeled halved lenghtwised and cored , or apricot seeded and halved
1 Tbspgranulated sugar
1/4 tspground cinnamon
2 tspunsalted butter
1/2 cpear juice
3sugar-free ginger cookies
How to Make Baked Pears and Apricots
- Preheat oven to 375 F. Place pear halves, cavity-side up, in a lgass baking dish or ramekin.: do not crowd. Combine sugar and sinnamon in small bowl: sprinkle over pears and apricots. Place 1/2 teaspoon butter in each per and apricot cavity. Pour pear juice into dish.
- Bake fruit 30 minutes, basting after 15 minutes. Remove from oven sprinkle with crushed gingersnaps. Returnto oven and bake 10 minutes.
