this is a great snack for a Diabetic, Its craves your sweet tooth. I always like a dessert after a meal, or really anytime. Try this out you'll be amazed.

Ingredients

  • 2 medium ripe bosc pears , peeled halved lenghtwised and cored , or apricot seeded and halved
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon ground cinnamon
  • 2 teaspoons unsalted butter
  • 1/2 cup pear juice
  • 3 - sugar-free ginger cookies

How To Make baked pears and apricots

  • Step 1
    Preheat oven to 375 F. Place pear halves, cavity-side up, in a lgass baking dish or ramekin.: do not crowd. Combine sugar and sinnamon in small bowl: sprinkle over pears and apricots. Place 1/2 teaspoon butter in each per and apricot cavity. Pour pear juice into dish.
  • Step 2
    Bake fruit 30 minutes, basting after 15 minutes. Remove from oven sprinkle with crushed gingersnaps. Returnto oven and bake 10 minutes.
