This is an old family recipe. Mom's cousin, Mae, was known to be an excellent cook and baker. Everyone was thrilled to be invited to her home for a meal. This is one of her signature desserts!

Ingredients

  • 3 cups tart apples, sliced
  • 2 tablespoons butter, cut in cubes
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg (my addition)
  • 1/3 cup quick cooking tapioca
  • 1 cup light brown sugar
  • 1 teaspoon salt
  • 2 1/2 cups water
  • - lemon juice, 1-2 tbsp.

How To Make baked apple tapioca

  • Step 1
    Arrange apples in greased 9 x 13-inch baking dish. Dot with butter and sprinkle with cinnamon and nutmeg.
  • Step 2
    Combine remaining ingredients in medium saucepan. Cook and stir over medium heat until mixture comes to a boil.
  • Step 3
    Pour hot mixture over apples in baking dish. Cover and bake in moderate oven (375 degrees) for 25 minutes or until apples are tender.
  • Step 4
    Remove from oven and stir. Serve warm with cream poured over or ice cream by the side.
