This is an old family recipe. Mom's cousin, Mae, was known to be an excellent cook and baker. Everyone was thrilled to be invited to her home for a meal. This is one of her signature desserts!

Ingredients

Add to Grocery List

3 c
tart apples, sliced
2 Tbsp
butter, cut in cubes
1/4 tsp
cinnamon
1/8 tsp
nutmeg (my addition)
1/3 c
quick cooking tapioca
1 c
light brown sugar
1 tsp
salt
2 1/2 c
water
lemon juice, 1-2 tbsp.

How to Make Baked Apple Tapioca

Step-by-Step

  • 1Arrange apples in greased 9 x 13-inch baking dish. Dot with butter and sprinkle with cinnamon and nutmeg.
  • 2Combine remaining ingredients in medium saucepan. Cook and stir over medium heat until mixture comes to a boil.
  • 3Pour hot mixture over apples in baking dish. Cover and bake in moderate oven (375 degrees) for 25 minutes or until apples are tender.
  • 4Remove from oven and stir. Serve warm with cream poured over or ice cream by the side.
