This is an old family recipe. Mom's cousin, Mae, was known to be an excellent cook and baker. Everyone was thrilled to be invited to her home for a meal. This is one of her signature desserts!

Ingredients

Add to Grocery List

  • 3 c
    tart apples, sliced
  • 2 Tbsp
    butter, cut in cubes
  • 1/4 tsp
    cinnamon
  • 1/8 tsp
    nutmeg (my addition)
  • 1/3 c
    quick cooking tapioca
  • 1 c
    light brown sugar
  • 1 tsp
    salt
  • 2 1/2 c
    water
  • ·
    lemon juice, 1-2 tbsp.

How to Make Baked Apple Tapioca

Step-by-Step

  1. Arrange apples in greased 9 x 13-inch baking dish. Dot with butter and sprinkle with cinnamon and nutmeg.
  2. Combine remaining ingredients in medium saucepan. Cook and stir over medium heat until mixture comes to a boil.
  3. Pour hot mixture over apples in baking dish. Cover and bake in moderate oven (375 degrees) for 25 minutes or until apples are tender.
  4. Remove from oven and stir. Serve warm with cream poured over or ice cream by the side.
