This is another recipe from the First Presbyterian Child Care Center in Bryan, TX from October 1983. Unfortunately, this wonderful treat isn't attributed to any particular person, but I thank whoever submitted it! It's delicious!

Ingredients
- CRUST
- 1 cup all purpose flour
- 1/4 cup brown sugar, firmly packed
- 1/2 cup butter, cold
- FRUIT TOPPING
- 2 large eggs
- 1 cup brown sugar, firmly packed
- 1 tablespoon lemon juice
- 1/3 cup all purpose flour
- 1/2 teaspoon baking powder
- 1/2 cup walnuts, chopped
- 2/3 cup dried apricots, finely slivered

How To Make apricot bars

Step 1Preheat oven to 350 degrees. Butter bottom and sides of an 8 x 8 x 2 inch baking pan.

Step 2To make crust: In medium bowl, stir together the 1 cup flour and 1/4 cup brown sugar.

Step 3With a pastry blender, cut in butter until particles are fine.

Step 4Pat over the bottom of the prepared baking pan. Bake in preheated 350 degree oven about 15 minutes or until golden brown. Remove from oven, but do not turn the oven off.

Step 5Prepare fruit topping while crust is baking.

Step 6Beat eggs until foamy.

Step 7Add the 1 cup brown sugar, lemon juice, 1/3 cup flour and baking powder. Beat until smooth.

Step 8Stir in the walnuts and apricots.

Step 9Spread over the hot baked layer and return to hot oven. Bake approximately 25 minutes or until browned.

Step 10Loosen edges while still warm, but cool completely before cutting into bars. (I cut them into very small bars, approximately 1 inch squares.)

Step 11Roll in powdered sugar. Store loosely in a closed container.
