Passed down from my mother-in-law. This recipe is my husband's favorite dessert.

Want an easy dessert recipe? Try making these apricot bars. They're unique and filled with apricot flavor. Pineapple chunks and raisins are throughout the bar and pair well with the apricots. These bars remind us of a fruit-flavored blondie. This is a light dessert when you want a treat but don't want something super heavy.

Ingredients
- 1 cup dried apricots, cut into pieces
- 1/2 cup raisins
- 2 tablespoons butter, softened
- 2 - eggs, well beaten
- 1 cup sugar
- 1 tablespoon lemon juice
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 can crushed pineapple, drained, 8 oz.
How To Make apricot bars

Step 1Cook apricots and raisins in a saucepan of water for 10 minutes. Drain.

Step 2In a bowl, cream butter, eggs, and sugar. Add lemon juice.

Step 3In a separate bowl, sift flour and baking powder. Add to creamed butter mixture.

Step 4Add apricots, raisins, and pineapple.

Step 5Pour into parchment lined 9x13 pan. Bake at 350 for 30-35 minutes or until brown.

Step 6Remove from pan. Cool. Dust with powdered sugar if you like. Cut into squares.
