Passed down from my Mother-In-Law, this recipe is my husbands favorite dessert.

1 c
dried apricots, cut into pieces
1/2 c
2 Tbsp
butter, softened
eggs, well beaten
1 c
1 Tbsp
lemon juice
1 c
1 tsp
baking powder
8 oz
can crushed pineapple, drained

How to Make Apricot Bars


  • 1Cook apricots and raisins in a saucepan of water for 10 minutes. Drain.
  • 2In a bowl, cream butter, eggs, and sugar. Add lemon juice.
  • 3In separate bowl sift flour and baking powder. Add to creamed butter mixture.
  • 4Add apricots, raisins, pineapple.
  • 5Pour into parchment lined 9x13 pan. Bake at 350 for 30-35 minutes or until brown.
  • 6Remove from pan. Cool. Dust with powdered sugar if you like. Cut into squares.
