This is my updated version of a shortcake my Grandma used to make.

Ingredients

  • SHORTCAKE:
  • 1 package (7 ounce) apple cinnamon muffin mix
  • 1/2 cup milk
  • 1/4 cup sour cream
  • 1/4-1/3 cup chopped pecans, optional
  • APPLE CINNAMON TOPPING:
  • 1 can (20 ounces) apple pie filling
  • 1/2 cup sugar, more or less as desired
  • 1/4 cup craisins or raisins
  • 1/4 cup water
  • 1/2-1 teaspoon cinnamon

How To Make apple shortcake

  • Step 1
    TO MAKE SHORTCAKE: Preheat oven to 425 degrees. Grease and flour a 9 inch square baking pan. Stir together muffin mix, milk, sour cream, and pecans. Pour into prepared pan. Bake for 10-12 minutes or until a toothpick insertd in center comes out clean. Cool completely and then cut into 6-9 squares depending on serving size desired.
  • Step 2
    TO MAKE TOPPING: In a saucepan over medium heat combine pie filling, sugar, craisins or raisins, water, and cinnamon. Stir until well mixed and hot. Serve over shortcakes with ice cream or whipped topping if desired.
