This traditional Danish dessert makes a wonderful accompaniment to any dinner. Feel free to add brandy or your favorite liqueur to the top of your pudding.

Ingredients
- 1 cup fresh bread crumbs
- 1/2 cup white sugar
- 1/2 cup hazelnuts
- 1 pound cooking apples
- 1 - lemon
- 3 tablespoons honey
- 3 tablespoons caster sugar
- 1 - egg white
How To Make apple pudding

Step 1Place breadcrumbs and white sugar in a nonstick skillet over low heat. Cook gently for about 4 minutes while constantly stirring until it's dark golden brown. Transfer to a bowl.

Step 2Chop the hazelnuts and toast them. Place the hazelnuts in a separate bowl and set aside.

Step 3Peel, core and slice the apples. Grate the lemon rind and juice the lemon. Mix with the apples and add honey.

Step 4Transfer the apple mixture into a skillet and cook for 10 minutes on low heat. Break up the apples with a spoon until they are soft and pulpy. Beat the apple mixture into a thick puree with a wooden spoon and set aside to cool down.

Step 5Stir together caster sugar and egg white until stiff - then fold into the cooled apple puree. Spoon half of the apple mixture into 4 glass bowls.

Step 6Top with breadcrumb mixture and then repeat layers. Finish with a layer of breadcrumbs and nuts.
