I found this recipe in a cook book from the 30's or 40's., I made them some time ago and they are really delicious.

yield About 24, depending on how thin you slice the apples

Ingredients

  • - 4 large tart apples
  • - 1 c milk
  • - 2 eggs, seperated
  • - 1 tspn sugar
  • - 1/2 tspn salt
  • - 2 cups flour
  • - t tblspn baking powder

How To Make apple fritters

  • Step 1
    Peel and core tart apples and cut into rings
  • Step 2
    To the milk add the well-beaten egg yolks and sugar.
  • Step 3
    sift flour, baking powder, and salt.
  • Step 4
    Add to milk/egg mixture, then fold in stiffly beaten egg whites.
  • Step 5
    Add sliced apples, being careful to get them completely covered in batter.
  • Step 6
    Fry in deep fat (360-370 deg.) and fry for two to three minutes. Server with powdered sugar.
