Ingredients

  • 1 can apple pie filling - cut apples into small chunks
  • 6 - 8" flour tortillas
  • 1 teaspoon cinnamon
  • 1/2 cup butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar, firmly packed
  • 1/2 cup water

How To Make apple enchiladas

  • Step 1
    Preheat oven to 350 degrees. Spray a 2 quart baking dish with cooking spray.
  • Step 2
    Spoon about 1 heaping tablespoon of pie filling in the center of tortilla then spread down the middle. Sprinkle with a little bit of cinnamon. Roll up folding edges to keep filling inside. Place seam side down in baking dish.
  • Step 3
    In a sauce pan combine the water, sugars and butter. Bring to a boil over medium heat stirring constantly. Reduce heat and simmer for 3 minute. Pour mixture over tortillas and let stand for 30 minutes.
  • Step 4
    Bake for 25 minutes until golden and bubbly.
