apple-berry baked oatmeal

This recipe makes an easy breakfast dessert that is rich in taste and smells so good while baking. Great served at brunch, or cut into slices and take to work for a great pick you up- great hot or cold. Other fruits can be used like fresh or frozen peaches, cherries, bananas, etc... You are going to love this with a nice hot cup of coffee or iced tea. Photo and recipe from Whole Foods, tweaked by me.

Ingredients

  • 2 cups fresh or frozen mixed berries or other fruit
  • 2 cups rolled oats( oatmeal not quick cooking)
  • 1/2 cup chopped pecans or other nuts, walnuts, almonds
  • 1 teaspoon baking powder
  • 1/4 teaspoon sea salt
  • 1 cup grated apple, peeled and cored
  • 1 cup milk any type
  • 1/2 cup vanilla yogurt
  • 1/3 cup maple syrup
  • 2 teaspoons vanilla extract
  • 1 large egg plus 1 egg yolk

How To Make apple-berry baked oatmeal

  • Step 1
    Preheat oven to 375^. Coat a 9-inch pie dish or 9-inch square dish with cooking spray; set aside. In a large bowl stir together berries, oats, pecans, baking powder, salt and apple.
  • Step 2
    In a medium bowl, whisk together milk, yogurt, syrup, vanilla, egg and extra yolk; stir into oat mixture.
  • Step 3
    Pour into prepared pie dish and bake until firm and golden brown on top, about 45-50 minutes. Cut into slices or squares and serve.
