spiced pumpkin pudding dessert
I wanted to make a pumpkin coffee cake one night, but never found a recipe I liked the looks of. So, I made my own. It turned out to be more like a bread pudding, but it was a HUGE success! My dad ate 3 LARGE pieces!

Ingredients
- CAKE
- 2 1/4 cups all purpose flour
- 1 1/4 cups brown sugar, firmly packed
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- 2/3 cup butter, softened
- 1 1/3 cups milk
- 1 teaspoon real vanilla
- 2 - eggs
- 1, 15oz cans mashed pumpkin
- 1/4 cup chopped walnuts or pecans (optional)
- CRUMB TOPPING
- 1 cup brown sugar
- 1/3 cup flour
- 1 teaspoon cinnamon
- 5 tablespoons butter, softened
How To Make spiced pumpkin pudding dessert

Step 1Cake: Preheat oven to 350*F. Mix together dry ingredients. Cut in butter, until it resembles course meal. In a separate bowl combine milk, pumpkin, eggs, and vanilla. Add liquid mixture to dry mixture. Mix until dry ingredients are wet. Spread in greased 9x13 pan.

Step 2Topping: Mix Dry ingredients. Cut in softened butter. Should be crumbly. If needed you can adjust the amounts of butter and flour sugar mixture to make it desired crumblyness. :P Sprinkle Crumb Topping on the cake. Sprinkle chopped walnuts. Bake for 40 minutes. Serve Warm. Refrigerate leftovers. Enjoy it with a nice hot cup of coffee!
