salted caramel banana pudding

I love all things salted caramel so have adapted this recipe to make it my own - and one of my favorites. Quick and easy, no oven or stovetop required, just mix it together and layer. Makes enough for a crowd (or me)!

Ingredients

  • 2 packages plain butter or shortbread cookies, like trefoils, chessmen, butter rings - enough to make 2 layers in a 9x13 dish
  • 1 package 5 ounce instant french vanilla pudding mix
  • 2 cups cold milk
  • 1 can 12 ounce canned dulce de leche
  • 12 ounces container whipped topping or equal amount sweetened whipped cream
  • 8 ounces cream cheese
  • 1 pinch coarse sea salt
  • 7-8 - ripe bananas, sliced

How To Make salted caramel banana pudding

  • Step 1
    Layer 9x13 dish with butter cookies and top with bananas. In a large bowl, mix the pudding mix with the cold milk until thickened. Add the dulce de leche and cream cheese, mixing until well blended. Fold in the whipped topping. Pour dulce de leche mixture over bananas and smooth surface. Lightly sprinkle sea salt (to taste, I just used a pinch) over the pudding. Top with another layer of cookies and chill until set and cookies soften (if you can wait that long).
