How to Make Lemon Curd
- 1In a saucepan mix eggs, sugar, and lemon juice until light in color. Stir in lemon zest and butter. Cook over medium-low or low heat, whisking constantly (about 8 minutes) until the mixture becomes thick, like pudding.
- 2Transfer to a small bowl and cover with plastic wrap. Chill for 2-3 hours.
- 3TIP: To use it as a spread, serve cold.
