Ingredients

    eggs
  • 1/2 c
    sugar
  • 3 Tbsp
    lemon juice
  • 1 tsp
    lemon zest, grated
  • 4 Tbsp
    butter (no substitutes), cubed into small pieces

How to Make Lemon Curd

Step-by-Step

  1. In a saucepan mix eggs, sugar, and lemon juice until light in color. Stir in lemon zest and butter. Cook over medium-low or low heat, whisking constantly (about 8 minutes) until the mixture becomes thick, like pudding.
  2. Transfer to a small bowl and cover with plastic wrap. Chill for 2-3 hours.
  3. TIP: To use it as a spread, serve cold.
