How to Make Lemon Curd
- In a saucepan mix eggs, sugar, and lemon juice until light in color. Stir in lemon zest and butter. Cook over medium-low or low heat, whisking constantly (about 8 minutes) until the mixture becomes thick, like pudding.
- Transfer to a small bowl and cover with plastic wrap. Chill for 2-3 hours.
