Ingredients
- 2 - eggs
- 1/2 cup sugar
- 3 tablespoons lemon juice
- 1 teaspoon lemon zest, grated
- 4 tablespoons butter (no substitutes), cubed into small pieces
How To Make lemon curd

Step 1In a saucepan mix eggs, sugar, and lemon juice until light in color. Stir in lemon zest and butter. Cook over medium-low or low heat, whisking constantly (about 8 minutes) until the mixture becomes thick, like pudding.

Step 2Transfer to a small bowl and cover with plastic wrap. Chill for 2-3 hours.
