great grandmother's baked rice pudding

For my entire childhood I had no idea that rice pudding could be made creamy in a saucepan. This is the recipe I grew up with.

Ingredients

  • 2 cups cooked rice
  • 3 cups milk
  • 1 1/2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup sugar
  • 3 - eggs, beaten
  • 1/2 cup raisins, optional
  • - cinnamon, optiona

How To Make great grandmother's baked rice pudding

  • Step 1
    Cook rice in 3 qt. saucepan as you normally would. (Bring rice to boil then reduce heat and simmer 30 minutes)
  • Step 2
    Combine cooked rice with all other ingredients except cinnamon. In a 10X6X2 baking dish which has been greased with butter (or margarine).
  • Step 3
    Bake pudding in 325 degree oven for 1 hour or until set. Sprinkle with cinnamon on the top, if desired. Serves 10.
