For my entire childhood I had no idea that rice pudding could be made creamy in a saucepan. This is the recipe I grew up with.

Ingredients

  • 2 c
    cooked rice
  • 3 c
    milk
  • 1 1/2 tsp
    vanilla extract
  • 1/4 tsp
    salt
  • 1/2 c
    sugar
  • 3
    eggs, beaten
  • 1/2 c
    raisins, optional
  • ·
    cinnamon, optiona

How to Make Great Grandmother's Baked Rice Pudding

Step-by-Step

  1. Cook rice in 3 qt. saucepan as you normally would.
    (Bring rice to boil then reduce heat and simmer 30 minutes)
  2. Combine cooked rice with all other ingredients except cinnamon.
    In a 10X6X2 baking dish which has been greased with butter (or margarine).
  3. Bake pudding in 325 degree oven for 1 hour or until set. Sprinkle with cinnamon on the top, if desired.
    Serves 10.
