great grandmother's baked rice pudding
For my entire childhood I had no idea that rice pudding could be made creamy in a saucepan. This is the recipe I grew up with.

Ingredients
- 2 cups cooked rice
- 3 cups milk
- 1 1/2 teaspoons vanilla extract
- 1/4 teaspoon salt
- 1/2 cup sugar
- 3 - eggs, beaten
- 1/2 cup raisins, optional
- - cinnamon, optiona
How To Make great grandmother's baked rice pudding

Step 1Cook rice in 3 qt. saucepan as you normally would. (Bring rice to boil then reduce heat and simmer 30 minutes)

Step 2Combine cooked rice with all other ingredients except cinnamon. In a 10X6X2 baking dish which has been greased with butter (or margarine).

Step 3Bake pudding in 325 degree oven for 1 hour or until set. Sprinkle with cinnamon on the top, if desired. Serves 10.
