creamy rice pudding

This easy and delicious recipe was given to me by a very good cook named Donna. It was her family's recipe. Photo by Food.com.

Ingredients

  • 5 cups whole milk
  • 1/2 cup sugar
  • 1/2-3/4 cup rice (arborio)
  • 2 - eggs
  • 1 teaspoon vanilla
  • 1 can (5 ounces) evaporated milk

How To Make creamy rice pudding

  • Step 1
    Cook milk, sugar and rice on medium heat for 1 1/2 hours on stove top. Stir often. Take the rice mixture off heat.
  • Step 2
    Beat eggs with vanilla. Remove 1 cup of the rice mixture and stir in beaten eggs. Add evaporated milk. Add mix back to pot and simmer gently for 2 minutes, just until thick enough to coat the back of a spoon.
  • Step 3
    Chill and top with cinnamon, if desired.
