This is one of my favorite recipes that I found online and then modified. You can also prepare and bake at 325 degrees in an oven for 30-45 minutes. I hope you enjoy it as much as my friends and family do! It tastes very authentic as my friends and family in Louisiana love it!

Blue Ribbon Recipe

Cooking the bread pudding in a Crock Pot makes this one easy dessert. From the golden raisins to the butterscotch chips, this bread pudding melts in your mouth. The rum glaze on top is the perfect touch. This was delicious!

Ingredients

  • 3 large eggs
  • 1/2 cup brown sugar, firmly packed
  • 1 teaspoon ground nutmeg
  • 2 tablespoons cinnamon
  • 1 cup heavy cream
  • 1 cup milk
  • 1 1/4 teaspoons pure vanilla extract
  • 1/4 cup butter, melted
  • 1/2 cup golden raisins
  • 1/2 cup butterscotch chips
  • 1 cup pecans, in pieces
  • 2 medium loves plain french bread, cubed
  • GLAZE
  • 1/3 cup heavy cream
  • 1 cup sugar
  • 1/2 cup butter, melted
  • 3 tablespoons dark rum or whiskey

How To Make cajun crock pot bread pudding

  • Step 1
    Spray 4-quart Crock Pot. In a large bowl, thoroughly whisk together eggs, brown sugar, nutmeg, and cinnamon.
  • Step 2
    Add heavy cream, milk, vanilla, and melted butter. Add in cubes of bread until they are mostly coated.
  • Step 3
    Carefully fold in raisins, butterscotch chips, and pecans. Pour into Crock Pot. Cover and cook on low in Crock Pot for 2 hours, until center is firm.
  • Step 4
    Pour into a 13x9 inch baking dish and pack down a bit with wooden spoon. Pour on glaze (optional). Serve and enjoy!
  • Step 5
    For glaze: Mix together cream, sugar, and butter in a small pot and cook over medium heat until melted. Do not boil. Remove from heat and add rum or whiskey. Pour over bread pudding.
