Ingredients

  • 3 large
    eggs
  • 1 1/2 c
    sugar
  • 1/2 c
    melted butter
  • 4 tsp
    lemon juice
  • 1 tsp
    vanilla
  • 1 1/2 c
    coconut
  • ·
    whipped cream (optional)

How to Make Toasted Coconut Pie

Step-by-Step

  1. Make your favorite pie crust
    (Or if you are like me, you go to the freezer section of the grocery store to get one)
  2. Beat Eggs in a large bowl

    Add the following ingredients to the eggs and mix well:
    -sugar
    -melted butter (cooled a bit)
    -lemon juice
    -teaspoon vanilla
  3. Remove from mixer and stir in coconut by hand.
  4. Pour mixture into the unbaked pie crust.
    Bake at 350 degrees for 45 minutes or until a knife inserted half way between center and edge comes out clean.
  5. Garnish with whipped cream. (optional)
