Ingredients

  • 3 large eggs
  • 1 1/2 cups sugar
  • 1/2 cup melted butter
  • 4 teaspoons lemon juice
  • 1 teaspoon vanilla
  • 1 1/2 cups coconut
  • - whipped cream (optional)

How To Make toasted coconut pie

  • Step 1
    Make your favorite pie crust (Or if you are like me, you go to the freezer section of the grocery store to get one)
  • Step 2
    Beat Eggs in a large bowl Add the following ingredients to the eggs and mix well: -sugar -melted butter (cooled a bit) -lemon juice -teaspoon vanilla
  • Step 3
    Remove from mixer and stir in coconut by hand.
  • Step 4
    Pour mixture into the unbaked pie crust. Bake at 350 degrees for 45 minutes or until a knife inserted half way between center and edge comes out clean.
  • Step 5
    Garnish with whipped cream. (optional)
