sweet potato pie
I love the fact that the recipes I am posting from my Mom's recipe box show their age. These recipes were before the invention of ready made pie crusts :-) Thank goodness for modern technology!!! I do not have too much luck with homemade pie crust.

Ingredients
- 1 - ready made frozen pie crust--baked per package directions
- 2 cups mashed sweet potatoes (about 3 large sweet potatoes)
- 1 cup milk
- 2 - eggs yolks
- 1 tablespoon butter-melted
- 1/2 cup sugar
- 1/2 teaspoon salt
- 1 teaspoon grated lemon rind
- ***PREHEAT OVEN TO 350 DEGREES***
How To Make sweet potato pie

Step 1Take your fresh sweet potatoes and boil them until tender. Remove the skin and mash them. Measure 2 cups. Place in a bowl. Using a mixer, beat egg yolks into the mashed sweet potatoes. Add butter, sugar, milk, salt, and lemon rind. Mix well. Pour into the pie crust and bake at 350* for 30 minutes or until set.
