sweet potato pie
My grandfather taught me how to make this pie. He made it at his diner in the 1920s.

Ingredients
- 1 stick (1/2 c.) melted butter
- 3 - eggs
- 3/4 teaspoon lemon extract
- 1/4 cup evaporated milk
- 1 teaspoon nutmeg
- 1 1/4 cups sugar
- 1 (9 in.) - uncooked pie crust
- 1 1/2 cups sweet potatoes, cooked and pureed
How To Make sweet potato pie

Step 1Preheat oven to 350 degrees.

Step 2In a food processor or blender, combine all ingredients except the crust. Process until well blended.

Step 3Pour into the pie crust.

Step 4Bake 50 minutes of until a knife inserted in the center comes out clean and pie in golden brown.

Step 5Cool on a rack before cutting. Top with whipped cream if desired.
