~ Scrumptious Cheesecake ~
- 1 3/4 c
- fine crushed graham crackers - i crush my own in food processor
- 1/2 c
- butter, melted
- 3 - 8 oz
- cream cheese, softened
- 1 c
- 2 Tbsp
- 1/4 c
- of your choice - i used a blackberry spreadable fruit
How to Make ~ Scrumptious Cheesecake ~
- 1Stir melted butter into crushed graham crackers , until evenly moistened . Press crumb mixture onto bottom and about 2 inches up the sides of an 8 or 9 inch springform pan. I use a metal measuring cup - works wonderfully.
In a bowl, combine cream cheese, sugar, flour, and vanilla. Beat until fluffy. Add eggs and yolk all at once, beating on low speed just until combined. Stir in milk. Pour into crust.
- 2Place cheesecake on a shallow baking pan.
Bake in a 350 degree oven for 35-40 minutes or until center appears nearly set when shaken ( but a tad bit jiggly.) Remove from oven and cool 15 minutes. With a thin knife loosen edges of crust from sides of pan. Cool for 30 minutes; remove sides of pan. Cool completely, and chill for at least 4 hours.
