Ingredients

  • 1 1/2 cups low-fat cottage cheese
  • 3 - eggs
  • 1 tablespoon rum flavoring or vanilla
  • 1 1/2 teaspoons pumpkin pie spice
  • 2 cups cooked pumpkin
  • 5 tablespoons brown sugar or sugar substitute
  • 1/2 teaspoon salt
  • 1 - graham cracker pie crust (8 inch)

How To Make low-cal pumpkin cottage pie

  • Step 1
    Blend cottage cheese, eggs, rum flavoring and spice in blender until very smooth. Combine pumpkin, sugar and salt. Stir in cottage cheese mixture. Pour into pre-baked pie shell. Bake in 275 degree oven for 60 minutes. Chill before serving.
