Ingredients
- 1 1/2 cups low-fat cottage cheese
- 3 - eggs
- 1 tablespoon rum flavoring or vanilla
- 1 1/2 teaspoons pumpkin pie spice
- 2 cups cooked pumpkin
- 5 tablespoons brown sugar or sugar substitute
- 1/2 teaspoon salt
- 1 - graham cracker pie crust (8 inch)
How To Make low-cal pumpkin cottage pie

Step 1Blend cottage cheese, eggs, rum flavoring and spice in blender until very smooth. Combine pumpkin, sugar and salt. Stir in cottage cheese mixture. Pour into pre-baked pie shell. Bake in 275 degree oven for 60 minutes. Chill before serving.
