low-fat cottage cheese

1 Tbsp
rum flavoring or vanilla
1 1/2 tsp
pumpkin pie spice
2 c
cooked pumpkin
5 Tbsp
brown sugar or sugar substitute
1/2 tsp
salt

graham cracker pie crust (8 inch)

How to Make Low-Cal Pumpkin Cottage Pie

Step-by-Step

  • 1Blend cottage cheese, eggs, rum flavoring and spice in blender until very smooth. Combine pumpkin, sugar and salt. Stir in cottage cheese mixture. Pour into pre-baked pie shell. Bake in 275 degree oven for 60 minutes. Chill before serving.
