Lemon Meringue Pie. This is a wonderful dessert with the perfect balance of sharp and sweet. Looks fabulous too!

- 1 - pie shell, baked
- 1 1/2 cups sugar
- 6 tablespoons cornstarch
- 1 pinch salt
- 1 1/3 cups cold water
- 2 tablespoons butter, room temperature
- 6 - egg yolks, reserve whites
- 1/2 cup lemon juice
- 1 tablespoon lemon rind, grated
- 6 - egg whites
- 1 pinch cream of tartar
- 1 pinch salt
- 3/4 cup sugar
