I have made this many times. It is a delicious pie.

large eggs
1 c
granulated sugar
4 Tbsp
butter, melted
1/4 c
evaporated milk (canned cream)
4 Tbsp
lemon juice
1 Tbsp
grated lemon rind
unbaked 9 inch pie crust

How to Make Lemon Chess Pie


  • 1Preheat oven to 350 degrees. Beat eggs and sugar together for 2 minutes. Add butter and cream, and beat for 2 more minutes. Add lemon juice and rind, and mix well.
  • 2Pour into pie crust and bake for 30-40 minutes until top is medium brown and jiggling in the middle third of pie. It will set up completely as it cools.
  • 3Serve with a spoonful of Cool Whip on top.
