I love a light lemony dessert after a heavy meal. I remember this recipe well.

Ingredients

  • 1 - unbaked pie shell
  • 1 stick butter or margarine
  • 1 cup sugar
  • 1 teaspoon all purpose flour
  • 1 - lemon (juice and rind)
  • 3 - eggs
  • **PREHEAT OVEN TO 425 DEGREES**

How To Make lemon chess pie

  • Step 1
    Melt the butter in a saucepan. Let cool slightly. Stir in 1 cup of sugar then add 1 teaspoonful of flour and the rind and juice of lemon. Place 3 eggs in a bowl and beat slightly. Add the eggs to the lemon mixture. (remove rind) Pour into the unbaked pie crust and bake for 30 minutes.
