I love a light lemony dessert after a heavy meal. I remember this recipe well.

Ingredients

unbaked pie shell
1 stick
butter or margarine
1 c
sugar
1 tsp
all purpose flour
1
lemon (juice and rind)
3
eggs

**PREHEAT OVEN TO 425 DEGREES**

Step-By-Step

1Melt the butter in a saucepan. Let cool slightly. Stir in 1 cup of sugar then add 1 teaspoonful of flour and the rind and juice of lemon. Place 3 eggs in a bowl and beat slightly. Add the eggs to the lemon mixture. (remove rind) Pour into the unbaked pie crust and bake for 30 minutes.
