Lemon Balm Cheese Cake
1 cgraham cracker pie crust
1/4 cfinely chopped pecans
1/4 cmelted butter
2 pkgcream cheese, soften
1/4 csour cream
2eggs lightly beaten
1 tspfinely chopped fresh lemon balm
1/2 tspvanilla extract
1lemon, juice and rind
How to Make Lemon Balm Cheese Cake
- In a small bowl combine the first 3 ingredients and press into a pie pan, set aside.
- In a large bowl, I used my stand-up mixer, beat the cream cheese, sugar and sour cream until nice and smooth. Add the eggs and beat on low speed just until combined then add the vanilla, lemon balm, and the juice and rind of 1 lemon.
- Bake at 350° for 35 to 40 minutes or until the center is almost set. Cool on a wire rack.
