lemon balm cheese cake
I love using fresh herbs and lemon balm is one of my favorites. It has a nice lemony fragrance and it tastes wonderful either as a tea or as an ingredient, pare it with fresh lemons and you are in lemon heaven! My 9 year old grandson loves this recipe and requests it often.

Ingredients
- 1 cup graham cracker pie crust
- 1/4 cup finely chopped pecans
- 1/4 cup melted butter
- 2 packages cream cheese, soften
- 1/4 cup sour cream
- 1/2 cup sugar
- 2 - eggs lightly beaten
- 1 teaspoon finely chopped fresh lemon balm
- 1/2 teaspoon vanilla extract
- 1 - lemon, juice and rind
How To Make lemon balm cheese cake

Step 1In a small bowl combine the first 3 ingredients and press into a pie pan, set aside.

Step 2In a large bowl, I used my stand-up mixer, beat the cream cheese, sugar and sour cream until nice and smooth. Add the eggs and beat on low speed just until combined then add the vanilla, lemon balm, and the juice and rind of 1 lemon.

Step 3Bake at 350° for 35 to 40 minutes or until the center is almost set. Cool on a wire rack. Top with fresh strawberries and lemon sauce. See the attached recipe for my lemon sauce recipe. Enjoy!
