homemade apple pie filling

Recipe handed down to me by my cousin who owned her restaurant and made pies for other restaurants. It's so good and I make it in a large batch and freeze in pints.

Ingredients

  • 6 pounds any cooking /baking apple
  • 2 cups sugar
  • 1/4 cup a.p. flour
  • 11/2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon or use apple pie spice

How To Make homemade apple pie filling

  • Step 1
    Wash, peel and core and slice (into thin slices)apples.
  • Step 2
    Combine all ingredients into sauce pan,stir well, and let stand until juicy. To keep apples from turning dark, stir in 2 Tbsp. lemon juice.
  • Step 3
    Cook over Medium heat, covered until begins to thicken, then stir to keep from sticking until thick enough it doesn't run off spoon,
  • Step 4
    Save enough to use immediately for fried pies or Apple Enchiladas if desired. To FREEZE: Ladle into sterilized pint jars or plastic freezer containers, leaving 1/2" head space in jars. Cool to room temperature, about 2 hrs..no more. Seal and freeze.
  • Step 5
    This makes a good pie with/without crusts for Crisps as well as fried pies.
