easy peezy cheesecake
I make this simple cheesecake for all family special occasions. It has even been requested as birthday gifts :) The longer it is refrigerated, the thicker it will become. Making it the day before is ideal. You can also vary the amount of lemon juice to make it more/less tart. The result is a very creamy dessert that is a definite crowd pleaser!

Ingredients
- 8 ounces cream cheese, room temperature
- 1 can sweetened condensed milk
- 1/4 cup lemon juice
- 2 teaspoons vanilla extract
- 1 - graham cracker pie crust
- 1 can your choice of topping (cherry, strawberry, etc.)

Step 1Mix softened cream cheese and sweetened condensed milk until completely blended.

Step 2Add lemon juice and vanilla. Mix with electric mixer until completely blended.

Step 3Put in pie crust and refrigerate at least 1 hour. Add desired topping and serve. Makes 6-8 servings.
