delicious oatmeal pie

This is the pie my Sister in law serves anytime we go to visit...it's my husbands second favorite, next to pecan...wonder why?...well, it tastes like pecan pie...matter of fact the first time she made it, that's what I thought it was...lol! It sure is a goodie...I used a deep dish, only because hubby likes the extra crust it gives...the filling won't come to the top...I also added the honey to the recipe...can make without... Enjoy!

Ingredients

  • 9 inch - unbaked pie crust
  • 1 cup sugar
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 1/2 - 3 tablespoons flour
  • 4 - eggs, beaten
  • 1 tablespoon honey
  • 1 cup light corn syrup
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 cup quick cooking oats - lightly toasted - optional, gives it a nuttier flavor...i didn't toast mine this time

How To Make delicious oatmeal pie

  • Step 1
    Preheat your oven to 350 degree F. In a medium sized bowl, mix together the sugar, flour, salt and cinnamon.
  • Step 2
    Add the beaten eggs and I use my whisk to beat until thoroughly blended.
  • Step 3
    Next add the corn syrup, vanilla, honey, melted butter. Mix well. Add the oats and incorporate well.
  • Step 4
    Pour into prepared pie shell. Bake for 45 minutes, the center will be a little jiggly. Don't over bake.
  • Step 5
    Cool completely, before cutting. Serve with a dollop of whipped cream, ice cream or alone.
