This is a recipe that I received from my mom many years ago. Perfect for hot summer days when you want to serve an impressive dessert, but just can't bear to use the oven in the summer heat. Lovely garnished with fresh lemons, whipped cream and fruit freshly picked from the garden such as raspberries and strawberries. After a long, hot day, try serving this to your family and friends with a tall, frosty glass of lemonade.

Ingredients

  • 1 can evaporated milk, 5 oz.
  • 1 package 3.4 oz. instant lemon pudding mix
  • 2 packages softened cream cheese, 8 oz. each
  • 3/4 cup lemonade concentrate, frozen
  • 1 - prepared graham cracker crust, or your own

How To Make cool & refreshing lemon pie for summer (easy)

  • Step 1
    In a medium mixing bowl, combine canned milk and pudding mix. Beat on low for 2 minutes.
  • Step 2
    In another large bowl, beat cream cheese until light and fluffy, around 3 minutes. Gradually beat in lemonade concentrate. Then add pudding mixture until well blended.
  • Step 3
    Pour into prepared graham crust. Cover and refrigerate for at least 4 hours.
  • Step 4
    Garnish with lemon twists and fresh raspberries or strawberries. Limes are pretty, too.
