Cecil's Sweet Potato Pie
2 1/2 lbsweet potatoes
2 tspgrated lemon peel
1 Tbsppure vanilla extract
2 tspground cinnamon
2 can(s)sweetened condensed milk (14 oz)
2 largeunbaked pie crust (deep dish)
How to Make Cecil's Sweet Potato Pie
- Boil sweet potatoes (skin on) in a large pot until tender. Drain and peel off the skin.
- Heat oven to 350
- . Beat sweet potatoes and butter in large bowl until smooth
- Add sweetened condensed milk, lemon peel, vanilla, cinnamon, nutmeg, salt and eggs; mix well. Pour into crusts.
- • BAKE 40 minutes or until golden brown. Cool. Garnish as desired (I usually sprinkle nutmeg, sugar and a little lemon juice on the top to give it extra flavor and a lil crunch)
