My friend's husband gave me this recipe. It's a twisted to the traditional sweet potato pie but it's delicious.

Ingredients

sweet potatoes
1/2 c
butter
2 tsp
grated lemon peel
1 Tbsp
pure vanilla extract
2 tsp
ground cinnamon
2 can(s)
sweetened condensed milk (14 oz)
2 tsp
nutmeg
1/2 tsp
salt
5 large
eggs
2 large
unbaked pie crust (deep dish)

How to Make Cecil's Sweet Potato Pie

Step-by-Step

  • 1Boil sweet potatoes (skin on) in a large pot until tender. Drain and peel off the skin.
  • 2Heat oven to 350
  • 3. Beat sweet potatoes and butter in large bowl until smooth
  • 4Add sweetened condensed milk, lemon peel, vanilla, cinnamon, nutmeg, salt and eggs; mix well. Pour into crusts.
  • 5• BAKE 40 minutes or until golden brown. Cool. Garnish as desired (I usually sprinkle nutmeg, sugar and a little lemon juice on the top to give it extra flavor and a lil crunch)
