Yum! This old fashioned pie was one of my favorites as a child...it takes some patience thickening with lots of stirring, but is so worth it...hope you enjoy!

Ingredients

  • 1/2 cup unsalted butter
  • 1 1/2 cups packed, brown sugar
  • 4 cups water
  • 1/2 cup flour
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 2 cups milk
  • 2 - egg yolks, beaten
  • 1 teaspoon vanilla extract
  • 2 - 9 - inch pie crusts, baked

How To Make cassies old fashioned butterscotch pie

  • Step 1
    In a large saucepan, combine butter and brown sugar. Cook over medium heat; until lightly golden. Add the water; cook for 10 minutes; stirring often.
  • Step 2
    In a medium bowl, mix flour, sugar and salt. In another saucepan, heat milk just until warm/ hot, not boiling. Swiftly, whisk the egg yolks into the warm milk. Now, mix the warm milk into the flour mixture and add this to the brown sugar / butter mixture. Stirring constantly over medium heat. Cook until thickened, anywhere from 20 - 35 minutes. Once thick enough, remove from burner and stir in the vanilla. Pour into prepared pie crusts. Refrigerate 2 - 3 hours. Can serve with whipped cream.
