Found this recipe in an old cook book, makes a special treat during the Holidays. Hope you like it.

Ingredients

  • 2 - ice cream pie shells
  • 1/4 cup brown sugar
  • 1 package (4 oz.) butterscotch pudding or pie filling mix.
  • 1 teaspoon vannila
  • 2 cups heavy cream
  • 1/2 cup pecans
  • ICE CREAM PIE SHELLS
  • 2 pints vanilla ice cream

How To Make butterscotch pecan pie

  • Step 1
    Line 8 inch pie pan 1 pint vanilla or favorite flavor Ice cream.
  • Step 2
    Cut Ice cream into 1/2" slices lay in bottom of pan to cover. Cut remaining slices in half; arrange around pan to make rim.Fill spots with Ice cream where needed.
  • Step 3
    With tip of spoon smooth crust. Freeze until firm before filling crust.
  • Step 4
    Add sugar to pudding mix. Prepar as directed on package.Cool; then add vanilla
  • Step 5
    Whip heavy cream.
  • Step 6
    Add nuts to butter scotch mixture. Fold in whip cream.
  • Step 7
    Pour into Ice cream pie shells. Freeze
  • Step 8
    To serve cut in whedges
