How to Make Blackberry Pie Bars

  1. For the crust/topping:
Preheat oven to 350- grease a large 9x13 pan and set aside.
Combine flour, sugar, and salt in a food processor and pulse a few times to combine. Cut butter into 1/2 inch cubes and add to the mixture. Process until butter is evenly distributed and mixture is still crumbly. Reserve 1 1/2 cups for the topping and press the remaining mixture into the greased pan and bake for 12-15 minutes, and allow to cool for at least 10 minutes.
  2. For the filling:
Whisk eggs and then add sugar, sour cream, flour, salt, lemon zest, and almond extract and whisk until combined. Gently fold in the blackberries and spoon over the crust. Sprinkle remaining topping over the top evenly and bake for 45-55 minutes. Allow to cool at least 1 hour before serving, otherwise it will be runny. Cut into bars
