~ banana cream pie ~
One of my favorite pies as a kid. There's nothing like a scratch made pudding for a pie. This basic pudding was my Grams recipe, she would be so pleased to know how often I've used it. You just can't beat a good banana cream pie. Enjoy!

Ingredients
- 1 - 9 - inch, baked pie crust
- 2 - 3 medium banana's
- 2 1/2 cups milk
- 1/2 cup heavy cream
- 1/3 cup + 1 tablespoon flour
- 3/4 cup sugar
- 1/4 teaspoon salt
- 3 - lightly beaten yolks - save the whites if making meringue
- 1 teaspoon vanilla
- 2 tablespoons butter
- whipped - cream, nuts and caramel ~ optional
How To Make ~ banana cream pie ~

Step 1Scald milk and cream in a saucepan. Whisk together flour, salt and sugar in a medium saucepan. Over medium heat, once milk is scalded, whisk it into the flour mixture. Continue stirring until thickening. Pour a small amount of pudding into the yolks and whisk quickly. Pour the yolks back into the mixture and continue cooking for another minute. I add a few drops of yellow food coloring now. Completely optional.

Step 2Remove from heat and stir in vanilla and butter. Cool pudding to lukewarm, doesn't have to be completely cool.

Step 3Slice banana's into the bottom of the crust and arrange them evenly. Pour the pudding over the banana's. I don't put meringue on my pie, so I just add some plastic wrap to the top of the pudding and finish cooling completely. Once cool, I top with whipped cream, nuts, caramel and some banana for garnish.
