~ Banana Cream Pie ~
1 - 9inch, baked pie crust
2 - 3 mediumbanana's
2 1/2 cmilk
1/2 cheavy cream
1/3 c+ 1 tablespoon flour
3lightly beaten yolks - save the whites if making meringue
whippedcream, nuts and caramel ~ optional
How to Make ~ Banana Cream Pie ~
- Scald milk and cream in a saucepan.
Whisk together flour, salt and sugar in a medium saucepan.
Over medium heat, once milk is scalded, whisk it into the flour mixture. Continue stirring until thickening.
Pour a small amount of pudding into the yolks and whisk quickly. Pour the yolks back into the mixture and continue cooking for another minute. I add a few drops of yellow food coloring now. Completely optional.
- Slice banana's into the bottom of the crust and arrange them evenly. Pour the pudding over the banana's.
I don't put meringue on my pie, so I just add some plastic wrap to the top of the pudding and finish cooling completely.
Once cool, I top with whipped cream, nuts, caramel and some banana for garnish.
