awesome coconut pie
My hubby loves pie's but can't eat regular sugar so i use Splenda..As you can see by the picture it has raisins.The original recipe calls for 2/3 c. raisins but i found out that the raisins sink to the bottom so i leave them out..

Ingredients
- 2 cups milk
- 3/4 cup sugar or splenda
- 1/2 cup all purpose baking mix
- 4 - eggs
- 1/4 cup (1/2 stick) butter melted (i nuke it for 1 min.lol)
- 1 1/2 tablespoons brandy (optional)
- 1 1/2 teaspoons vanilla extract
- 1 1/3 cups coconut, flaked
How To Make awesome coconut pie

Step 1PREHEAT oven to 350F place milk, sugar, eggs, butter, brandy and vanilla in a bowl mix good using a spoon then add baking mix. Use electric mixer on medium for 3 minutes

Step 2POUR into a greased 9 inch pie plate..(I use an 9 inch round baking dish. it's deeper) sprinkle with coconut do not stir.

Step 3Bake 40 minutes or until pie is set in center and top is golden brown. cool on wire rack. serve warm or at room temp.

Step 4To Prevent Spillover:: place pie plate (or baking dish) on a baking sheet. This helps to stabilizes the pie and prevents spillover
