almond joy pie
OK. So today because it is a bank holiday and I am off, I had too much time on my hands . So I made squash pie, but the recipe makes three pies supposedly but I have deep dish pie pans so it only made 2. What to do, What to do????? So with 1 empty pie shell I thought coconut custard pie(my favorite) then chocalate coconut pie or the almond joy pie. The recipes I found did not measure up to want I wanted. So I made my own.

Ingredients
- 2 tablespoons cornstarch
- 2 teaspoons cornstarch
- 1 1/2 cups milk
- 1/2 cup sugar
- 1 can sweetened condensed milk
- 1 1/`2 cups flaked coconut
- 1 ounce melted semi sweetchocolate
- 1/2 teaspoon cocnut extract
- TOPPING
- 4 ounces almond slices
- 1/4 cup flaked coconut
- 1/2 cup chocolate sauce for topping
- CRUST
- 1 - deep dish pie shell
- OR ALTERNATE CRUST
- 2 cups oreo crumbs
- 4 tablespoons butter, melted
How To Make almond joy pie

Step 1Add melted butter to oreo crumbs and mix until combined.

Step 2Press oreo mixture evenly into the bottom and up the sides of a 9 inch pie pan, then set aside.

Step 3Whisk the cornstarch and 1/4 cup milk together in a small bowl. Set aside

Step 4Add remaining milk, sugar, sweetened condensed milk, flaked coconut, vanilla and coconut extract to a pan and whisk over medium heat until well combined and warm.

Step 5Add the cornstarch mixture to the coconut mixture

Step 6Bring the mixture to a boil, stirring constantly with a whisk. It will begin to thicken

Step 7Once boiling, stir continuously for about 2 minutes, until fully thickened.

Step 8If using store bought pie shell skip steps 1 and 2

Step 9Pour mixture into crust, then refrigerate until firm. Approximately 3 to 4 hours

Step 10Once pie is firm, drizzle with chocolate sauce, then sprinkle additional coconut flakes on top.

Step 11Pipe whipped cream around the edges of the pie, the sprinkle sliced almonds over pie. Refrigerate until ready to serve.
