Ingredients
- 1/2 cup flour
- 1/4 cup brown sugar, firmly packed
- 1/4 cup quick oats
- 2 tablespoons chopped walnuts
- 1 teaspoon cinnamon
- 1/4 cup unsalted butter, melted
- FILLING
- 1/2 cup pumpkin
- 1/4 cup milk plus 2 tbsp.
- 1 -1/2 tablespoon vanilla
- 1 - egg, slightly beaten
- 3 tablespoons sugar
- 1/4 teaspoon allspice
- 1/8 teaspoon salt
- TOPPING
- 1/4 pound cream cheese, softened
- 2 tablespoons orange marmalade
How To Make pumpkin bars with cream cheese topping

Step 1Crust: Combine the first 4 ingredients and half the cinnamon in the food processor or mixing bowl. Add butter and process until mixture becomes crumbly. Press mixture evenly in bottom of a lightly greased 9 inch square baking pan. Bake at 350 degrees for 20 minutes. Remove from oven.

Step 2Reduce oven temperature to 325 degrees.

Step 3Combine pumpkin, milk, half the vanilla, egg, sugar, allspice , salt and remaining cinnamon in a food processor or mixing bowl and mix thoroughly. Pour over crust and bake 25 minutes. Cool on a rack.

Step 4Using an electric mixer, beat cream cheese, remaining vanilla and orange marmalade until fluffy. Spread evenly over cooled pumpkin bars.
