This recipe is the best one out there. More flour & sugar than Emeril's. I had to use his recipe for a wedding reception, but it didn't turn out as good. :( So happy I found the original recipe I've been making it for 35 yrs. YUM.

Ingredients
- 1 cup all purpose flour ( + 2 t)
- 1/4 cup powdered sugar (+ xtra for dusting)
- 1/2 cup butter (room temperature)
- 2 - eggs, well beaten (room temp)
- 1 cup sugar
- 2 tablespoons lemon juice concentrate (i use 3t)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
How To Make lemon squares

Step 1Preheat oven to 350 degrees F. Double recipe for 13 x 9 pan.

Step 2Combine 1 cup flour, powdered sugar & butter to form a dough. Use fingers or pastry knife until mixture resembles small balls. Press firmly into bottom of pan. Bake 15-20 minutes until light brown.

Step 3While dough is cooking, Mix beaten eggs with juice, sugar, 2T flour, baking powder & salt. Beat 3 minutes on medium. Pour egg mixture over cooked dough. Bake 20-25 minutes. No imprint when done. Sprinkle powdered sugar over top with sifter.
