kadayef (shreded daugh) with cornstarch cream

I learn this recepe from Armenian church women's quilt in Fresno, 30 years ago, and I been making since then every holidays, church and charity fund raising functions, I always get complements then asked for recipe. I like to share with my just a pinch friends.

Ingredients

  • 1 pound kadayef
  • 1/2 pound clarefied sweet butter
  • 2 tablespoons fine crushed pistachio (optional)
  • FILLING
  • 1 quart half and half or 2 cups milk
  • 1 quart whipping cream
  • 1/2 cup cornstarch
  • 1/4 cup sugar
  • 1 tablespoon orange blossom
  • SYRUP
  • 2 cups sugar
  • 2 cups water
  • 1 tablespoon lemon juice
  • 2 tablespoons orange blossom

How To Make kadayef (shreded daugh) with cornstarch cream

  • Step 1
    Prepare the syrup by boiling sugar with the water on a high heat, after sugar dissolves completely,lower the heat to low medium,add lemon juice and cook about 10 minutes or longer until syrup get slightly thicker, turn off stove then add orange blossom. Set a side.( can be make few days ahead and keep in refrigerator).
  • Step 2
    In a large bowel combine Shredded Kadayef with melted butter,mixing with hands until every strand is evenly coated with butter. Spread half of the dough into 8 by 12 inch baking dish: Spread the filling evenly over the surface. Cover with remaining dough,press the surface down very firmly: Bake at 375 degree, about 30-35 minutes or until Kadayef is a nice golden brown. Cut into 2 inches squares.
  • Step 3
    Pour hot syrup over and spread with fine crushed pistachio(its optional)
  • Step 4
    Serve hot or warn, with a cup coffee or tea.
