I whipped up a fresh batch and opted for dark chocolate. This one is even better than the store bought. I used organic ingredients, but it isn't necessary. Ingredients
- 12 - egg yolks
- 1 1/2 cups sugar
- 1 tablespoon cinnamon
- 1 tablespoon freshly grated nutmeg
- 3 1/2 cups whole milk
- 2 1/2 cups heavy cream
- 1/2 cup whole milk
- 1/2 cup dark chocolate chips
- 1 tablespoon dark chocolate cocoa powder
- 1 tablespoon vanilla
- 1/2 cup rum, optional
- 1/2 cup brandy, optional

Step 1In a saucepan, heat vanilla, 1/2 c milk, cocoa powder, and chocolate chips on low. Whisk continually until chocolate is totally melted and combined. Set aside to cool.

Step 2Take 12 yolks and add sugar, cinnamon, and nutmeg. Beat until creamy.

Step 3Add milk, cream, and vanilla. Continue to beat for 3 minutes.

Step 4Stir in cooled chocolate mixture.
