Found an old cobbler recipe and made it diabetic safe. You can use frozen strawberries if you can't find fresh

Ingredients

  • 1 stick
    butter
  • 1 large
    egg, lightly beaten
  • 1 c
    2% milk
  • 1 c
    all purpose flour
  • 1/2 c
    splenda/sugar blend
  • 2 tsp
    baking powder
  • 1/2 tsp
    sea salt
  • 2 qt
    whole strawberries, capped and washed
  • 4 oz
    low fat cream cheese cut in small pieces

How to Make Bunyan's Diabetic Strawberry Cream Cheese Cobbler

Step-by-Step

  1. Preheat oven to 350 degrees.
  2. Melt butter and pour into a 9-by-13-inch glass baking dish.
  3. In a small bowl, mix together the egg, milk, flour, splenda / sugar blend, baking powder, and salt
  4. Pour directly over the butter in the baking dish, but do not stir.
  5. Add the strawberries, arranging in a single layer as much as possible.
  6. Sprinkle cream cheese pieces over strawberries.
  7. Bake for 45 minutes, or until top is golden brown and edges are bubbling. (Crust rises up and around the fruit, but fruit will still peek out of top.)
  8. Cool completely on a cake rack before serving
