Found an old cobbler recipe and made it diabetic safe. You can use frozen strawberries if you can't find fresh

Ingredients

  • 1 stick butter
  • 1 large egg, lightly beaten
  • 1 cup 2% milk
  • 1 cup all purpose flour
  • 1/2 cup splenda/sugar blend
  • 2 teaspoons baking powder
  • 1/2 teaspoon sea salt
  • 2 quarts whole strawberries, capped and washed
  • 4 ounces low fat cream cheese cut in small pieces

How To Make bunyan's diabetic strawberry cream cheese cobbler

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Melt butter and pour into a 9-by-13-inch glass baking dish.
  • Step 3
    In a small bowl, mix together the egg, milk, flour, splenda / sugar blend, baking powder, and salt
  • Step 4
    Pour directly over the butter in the baking dish, but do not stir.
  • Step 5
    Add the strawberries, arranging in a single layer as much as possible.
  • Step 6
    Sprinkle cream cheese pieces over strawberries.
  • Step 7
    Bake for 45 minutes, or until top is golden brown and edges are bubbling. (Crust rises up and around the fruit, but fruit will still peek out of top.)
  • Step 8
    Cool completely on a cake rack before serving
