Early one Saturday morning, I decided to make some muffins. I didn't have the raisins I needed for the recipe but I did have frozen blueberries. I defrosted them, made these muffins and voila! Blueberry yumminess!

1 c
all purpose flour
1/2 c
quick oats, uncooked
1/4 c
brown sugar, lightly packed
2 tsp
baking powder
1/4 tsp
1/4 tsp
ground allspice
2/3 c
milk (i used 2% because that's what was in the fridge)
eggs, slightly beaten
2 Tbsp
vegetable oil
1 c
blueberries, fresh or frozen (thaw if frozen)

How to Make Blueberry Oatmeal Muffins


  • 1Preheat oven to 400 degrees. Line 12 regular-sized muffin cups with liners, or spray with non-stick vegetable spray.
  • 2In a large bowl, combine flour, oatmeal, sugar, baking powder, salt and allspice. In a smaller bowl, slightly beat eggs then add milk and vegetable oil. Add to dry ingredients and stir until just moistened. Batter will be lumpy. Fold in blueberries.
  • 3Fill each muffin cup 2/3 full with batter. Bake for 20 minutes at 400 degrees or until a toothpick inserted comes out clean. Enjoy!
