blueberry oatmeal muffins

Early one Saturday morning, I decided to make some muffins. I didn't have the raisins I needed for the recipe but I did have frozen blueberries. I defrosted them, made these muffins and voila! Blueberry yumminess!

Ingredients

  • 1 cup all purpose flour
  • 1/2 cup quick oats, uncooked
  • 1/4 cup brown sugar, lightly packed
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground allspice
  • 2/3 cup milk (i used 2% because that's what was in the fridge)
  • 2 - eggs, slightly beaten
  • 2 tablespoons vegetable oil
  • 1 cup blueberries, fresh or frozen (thaw if frozen)

How To Make blueberry oatmeal muffins

  • Step 1
    Preheat oven to 400 degrees. Line 12 regular-sized muffin cups with liners, or spray with non-stick vegetable spray.
  • Step 2
    In a large bowl, combine flour, oatmeal, sugar, baking powder, salt and allspice. In a smaller bowl, slightly beat eggs then add milk and vegetable oil. Add to dry ingredients and stir until just moistened. Batter will be lumpy. Fold in blueberries.
  • Step 3
    Fill each muffin cup 2/3 full with batter. Bake for 20 minutes at 400 degrees or until a toothpick inserted comes out clean. Enjoy!
