Blueberry Oatmeal Muffins
1 call purpose flour
1/2 cquick oats, uncooked
1/4 cbrown sugar, lightly packed
2 tspbaking powder
1/4 tspground allspice
2/3 cmilk (i used 2% because that's what was in the fridge)
2eggs, slightly beaten
2 Tbspvegetable oil
1 cblueberries, fresh or frozen (thaw if frozen)
How to Make Blueberry Oatmeal Muffins
- Preheat oven to 400 degrees. Line 12 regular-sized muffin cups with liners, or spray with non-stick vegetable spray.
- In a large bowl, combine flour, oatmeal, sugar, baking powder, salt and allspice. In a smaller bowl, slightly beat eggs then add milk and vegetable oil. Add to dry ingredients and stir until just moistened. Batter will be lumpy. Fold in blueberries.
- Fill each muffin cup 2/3 full with batter. Bake for 20 minutes at 400 degrees or until a toothpick inserted comes out clean. Enjoy!
