blueberry oatmeal muffins
Early one Saturday morning, I decided to make some muffins. I didn't have the raisins I needed for the recipe but I did have frozen blueberries. I defrosted them, made these muffins and voila! Blueberry yumminess!

Ingredients
- 1 cup all purpose flour
- 1/2 cup quick oats, uncooked
- 1/4 cup brown sugar, lightly packed
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground allspice
- 2/3 cup milk (i used 2% because that's what was in the fridge)
- 2 - eggs, slightly beaten
- 2 tablespoons vegetable oil
- 1 cup blueberries, fresh or frozen (thaw if frozen)
How To Make blueberry oatmeal muffins

Step 1Preheat oven to 400 degrees. Line 12 regular-sized muffin cups with liners, or spray with non-stick vegetable spray.

Step 2In a large bowl, combine flour, oatmeal, sugar, baking powder, salt and allspice. In a smaller bowl, slightly beat eggs then add milk and vegetable oil. Add to dry ingredients and stir until just moistened. Batter will be lumpy. Fold in blueberries.

Step 3Fill each muffin cup 2/3 full with batter. Bake for 20 minutes at 400 degrees or until a toothpick inserted comes out clean. Enjoy!
