Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup quaker one minute oats
  • 1 stick butter, melted
  • 2 tablespoons brown sugar
  • 1/2 cup chopped walnuts
  • CREAM CHEESE FILLING
  • 1 package cream cheese (8oz)
  • 1 can sweetened condensed milk (14oz)
  • 1 teaspoon vanilla extract
  • 1/3 cup lemon juice
  • BLUEBERRY TOPPING
  • 2 cups blueberries
  • 1 tablespoon corn starch
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1 tablespoon lemon juice

How To Make blueberry cheesecake

  • Step 1
    Combine first 5 ingredients and press into a sprayed 8 x 8 inch baking pan. Bake in preheated 350 degree oven 10 minutes and let cool.
  • Step 2
    Combine filing ingredients and mix on high for 4 minutes. Pour over cooled crust. Refrigerate for 1 hour.
  • Step 3
    Combine all topping ingredients and bring to boil stirring constantly. Cook for 2 minutes to thicken. Remove and set aside to cool. Pour over cheesecake after it has been refrigerated for 1 hour.
  • Step 4
    Refrigerate for another hour and then serve!
