A great way to use those blueberry's this time of year!

Ingredients

  • 1 1/2 c
    graham cracker crumbs
  • 1/2 c
    quaker one minute oats
  • 1 stick
    butter, melted
  • 2 Tbsp
    brown sugar
  • 1/2 c
    chopped walnuts
  • CREAM CHEESE FILLING

  • 1 pkg
    cream cheese (8oz)
  • 1 can(s)
    sweetened condensed milk (14oz)
  • 1 tsp
    vanilla extract
  • 1/3 c
    lemon juice
  • BLUEBERRY TOPPING

  • 2 c
    blueberries
  • 1 Tbsp
    corn starch
  • 1/4 tsp
    cinnamon
  • 1/8 tsp
    nutmeg
  • 1 Tbsp
    lemon juice

How to Make Blueberry Cheesecake

Step-by-Step

  1. Combine first 5 ingredients and press into a sprayed 8 x 8 inch baking pan. Bake in preheated 350 degree oven 10 minutes and let cool.
  2. Combine filing ingredients and mix on high for 4 minutes. Pour over cooled crust. Refrigerate for 1 hour.
  3. Combine all topping ingredients and bring to boil stirring constantly. Cook for 2 minutes to thicken. Remove and set aside to cool. Pour over cheesecake after it has been refrigerated for 1 hour.
  4. Refrigerate for another hour and then serve!
