Ingredients
- 375 grams fresh beetroot - peeled & grated very fine on grater
- 270 grams self rising flour
- 35 grams cocoa powder
- 1 teaspoon mixed spice powder
- 200 grams brown sugar
- 3 large 3ggs - room temperature
- 180 grams unsalted butter - melted and cooled
- 2 teaspoons vanilla essence
- 1 tube white frosting

Step 11) Preheat oven to 180 C 2) Line muffin tray with paper cupcakes. 3) Beetroot wash and grate on grate on the smallest holes,keep in a bowl.Add sifted flour,cocoa,mixed spice,sugar,eggs,butter,vanilla essence and mix all well together. 4)Spoon each paper cupcakes with the mixture.(about 3/4) 5)Bake for about 25 - 30 minutes or until a skewer inserted into centers comes out dry.Set the cupcakes on wire rack,cool then decorated with sweetened frosting and your favourite ingredients. PS.This cupcakes are very delicious and tasty,you will be surprise.
