Ingredients

  • 2 cups graham cracker crumbs
  • 1 cup finely chopped pecans
  • 1/3 cup brown sugar
  • 2/3 cup butter, melted
  • TOPPING
  • 1/4 cup quick cooking oats
  • 1/2 cup brown sugar
  • 1/2 cup flour
  • 1 teaspoon cinnamon
  • 1/4 cup finely chopped pecans (optional)
  • 4 tablespoons butter
  • - caramel ice cream topping
  • FILLING
  • 4 packages (8 ounce) cream cheese, softened
  • 1/2 cup brown sugar
  • 3/4 cup sour cream
  • 4 - eggs
  • 1 3/4 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 2 cups apples, peeled, cored and slioed

How To Make apple crisp cheesecake

  • Step 1
    Crust: Combine all ingredients. Press into bottom and 1 1/2 inches up sides of a 10 inch springform pan. Chill.
  • Step 2
    Topping: Combine all ingredients, except caramel ice cream topping, until crumbly. Set aside.
  • Step 3
    Filling: Beat cream cheese, brown sugar and sour cream for 2 minutes. Add eggs, one at a time, beating well on low speed. Add spices and vanilla. Pour into crust. Spread apples over filling. Sprinkle topping ingredients, which have been mixed, on top.
  • Step 4
    Bake at 325 degrees for 65-75 minutes. Cool completely in pan on wire rack, Chill overnight.
  • Step 5
    Serve with 1 tablespoon of caramel ice cream topping over each slice.
