If you love apple crisp and cheesecake, this cheesecake is for you, with a delicious graham cracker crust filled with a luscious filling, then sprinkled with a crumbly topping, similar to an apple crisp.

  • 2 c
    graham cracker crumbs
  • 1 c
    finely chopped pecans
  • 1/3 c
    brown sugar
  • 2/3 c
    butter, melted

  • 1/4 c
    quick cooking oats
  • 1/2 c
    brown sugar
  • 1/2 c
  • 1 tsp
  • 1/4 c
    finely chopped pecans (optional)
  • 4 Tbsp
  • ·
    caramel ice cream topping

  • 4 pkg
    (8 ounce) cream cheese, softened
  • 1/2 c
    brown sugar
  • 3/4 c
    sour cream
  • 4
  • 1 3/4 tsp
  • 1/2 tsp
  • 2 c
    apples, peeled, cored and slioed

How to Make Apple Crisp Cheesecake


  1. Crust: Combine all ingredients. Press into bottom and 1 1/2 inches up sides of a 10 inch springform pan.
  2. Topping: Combine all ingredients, except caramel ice cream topping, until crumbly. Set aside.
  3. Filling: Beat cream cheese, brown sugar and sour cream for 2 minutes.
    Add eggs, one at a time, beating well on low speed.
    Add spices and vanilla.
    Pour into crust.
    Spread apples over filling.
    Sprinkle topping ingredients, which have been mixed, on top.
  4. Bake at 325 degrees for 65-75 minutes.
    Cool completely in pan on wire rack,
    Chill overnight.
  5. Serve with 1 tablespoon of caramel ice cream topping over each slice.
