This was my husband's favorite dessert...so simple, so nice and easy for a hot day. ( or any day).

Ingredients

  • 2 scoops coffee ice cream
  • 1/3 cup coconut-toasted
  • 2 ounces kahlua
  • 1 ounce almonds-slivered..garnish

How To Make ice cream coffee dessert

  • Step 1
    Let ice cream set out for for 15 minutes. Scoop out 2 big scoops. 1 for each cocktail or parfait glass. Roll each in toasted coconut. Pour 1 shot of Kahlua over each scoop. Garnish with slivered almonds if desired.
  • Step 2
    To toast coconut: Place coconut in a pie pan; place under broiler on med heat in medium part of oven. Brown and stir for about 2 minutes. Watch closely.
  • Step 3
    The problem with this recipe is you will want more than one scoop.
