I first encountered this recipe back in 1991 when I volunteered to help in the kitchen at an event featuring 18th century tavern music at the University of Michigan Clemens Library.

Ingredients

1 1/2 c
cup sugar
1/2 c
flour
2 Tbsp
corn starch
1/2 tsp
salt
2 1/2 c
water
juice from 1 lemon
grated lemon rhind from 1 lemon
3-4 drops yellow food coloring
3 dozen baked tart shells

Step-By-Step

1Combine 1 1/2 cup sugar, flour, cornstarch and salt. Add 2 1/2 cups water, in a sauce pan over medium heat, stirring constantly until thick and bubbly.
2Cool slightly and pour into tart shells. Chill for several hours before serving.
