I first encountered this recipe back in 1991 when I volunteered to help in the kitchen at an event featuring 18th century tavern music at the University of Michigan Clemens Library.

  • 1 1/2 c
    cup sugar
  • 1/2 c
  • 2 Tbsp
    corn starch
  • 1/2 tsp
  • 2 1/2 c
  • ·
    juice from 1 lemon
  • ·
    grated lemon rhind from 1 lemon
  • ·
    3-4 drops yellow food coloring
  • ·
    3 dozen baked tart shells

How to Make Lemon Tarts


  1. Combine 1 1/2 cup sugar, flour, cornstarch and salt. Add 2 1/2 cups water, in a sauce pan over medium heat, stirring constantly until thick and bubbly.
  2. Cool slightly and pour into tart shells. Chill for several hours before serving.
