I first encountered this recipe back in 1991 when I volunteered to help in the kitchen at an event featuring 18th century tavern music at the University of Michigan Clemens Library.

Ingredients

  • 1 1/2 cups cup sugar
  • 1/2 cup flour
  • 2 tablespoons corn starch
  • 1/2 teaspoon salt
  • 2 1/2 cups water
  • - juice from 1 lemon
  • - grated lemon rhind from 1 lemon
  • - 3-4 drops yellow food coloring
  • - 3 dozen baked tart shells

How To Make lemon tarts

  • Step 1
    Combine 1 1/2 cup sugar, flour, cornstarch and salt. Add 2 1/2 cups water, in a sauce pan over medium heat, stirring constantly until thick and bubbly.
  • Step 2
    Cool slightly and pour into tart shells. Chill for several hours before serving.
