Most Lemon Bar recipes have the same base ingredients, it's all a matter of personal taste. This recipe was my grandmother's recipe. Not to tart, not to sweet. It's been a never fail, always gone recipe for me over the years.

I have also made this gluten free by using oatmeal flour in the crust and 2 tsp cornstarch in the base.

Ingredients

2 c
flour
1 c
butter
1/2 c
powdered sugar
4
eggs
2 c
granulated sugar
6 Tbsp
lemon juice, fresh
1 tsp
lemon zest, grated
4 tsp
flour
1 tsp
baking powder

How to Make Lemon Bars

Step-by-Step

  • 1Crust:
    Cream together the 2 C. flour, butter and confectioners sugar until well blended. Press into bottom of lightly greased 9x13 pan. Bake at 350 for 20 minutes until lightly golden.
  • 2Base:
    Mix together all remaining ingredients until well blended. (I use fresh lemon juice because I am zesting the peel anyway)
  • 3Pour Base ingredients over baked crust and continue baking an additional 25 minutes.
  • 4Remove from oven and while still warm lightly sprinkle with additional confectioners sugar, Just a light dusting will do.
