Most Lemon Bar recipes have the same base ingredients, it's all a matter of personal taste. This recipe was my grandmother's recipe. Not to tart, not to sweet. It's been a never fail, always gone recipe for me over the years. I have also made this gluten free by using oatmeal flour in the crust and 2 tsp cornstarch in the base.

Ingredients

  • 2 cups flour
  • 1 cup butter
  • 1/2 cup powdered sugar
  • 4 - eggs
  • 2 cups granulated sugar
  • 6 tablespoons lemon juice, fresh
  • 1 teaspoon lemon zest, grated
  • 4 teaspoons flour
  • 1 teaspoon baking powder

How To Make lemon bars

  • Step 1
    Crust: Cream together the 2 C. flour, butter and confectioners sugar until well blended. Press into bottom of lightly greased 9x13 pan. Bake at 350 for 20 minutes until lightly golden.
  • Step 2
    Base: Mix together all remaining ingredients until well blended. (I use fresh lemon juice because I am zesting the peel anyway)
  • Step 3
    Pour Base ingredients over baked crust and continue baking an additional 25 minutes.
  • Step 4
    Remove from oven and while still warm lightly sprinkle with additional confectioners sugar, Just a light dusting will do.
