I have also made this gluten free by using oatmeal flour in the crust and 2 tsp cornstarch in the base.

1/2 cpowdered sugar
2 cgranulated sugar
6 Tbsplemon juice, fresh
1 tsplemon zest, grated
1 tspbaking powder
How to Make Lemon Bars
Cream together the 2 C. flour, butter and confectioners sugar until well blended. Press into bottom of lightly greased 9x13 pan. Bake at 350 for 20 minutes until lightly golden.
Mix together all remaining ingredients until well blended. (I use fresh lemon juice because I am zesting the peel anyway)
- Pour Base ingredients over baked crust and continue baking an additional 25 minutes.
- Remove from oven and while still warm lightly sprinkle with additional confectioners sugar, Just a light dusting will do.
