individual no bake strawberry cheese cake

I made this for a challenge for low carb. I do not know if I suceeded. I still cant get the gist of calculating carbs. Holly be paitent with me please. BUT I must admit the combination of the toasted walnuts, honey and cinnamon is exceptionally tastey and went well with the filling and topping. This is a good dessert for single servings. I would suggest if you want to make a pie use a little non flavored geliton to firm it up more.

Ingredients

  • TOPPING
  • 1 pint fresh strawberries, diced to medium pieces
  • 1/4 cup sugar
  • 1 tablespoon red wine vinegar
  • CRUST
  • 1 1/2 cups walnut pieces
  • 1 tablespoon brown sugar
  • 1 tablespoon honey
  • 1 teaspoon cinnamon
  • 2 tablespoons butter, melted
  • FILLING
  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1 small lemon, zest and juice
  • 1/4 cup honey
  • 1/4 cup pure maple syrup
  • 2 teaspoons vanilla

How To Make individual no bake strawberry cheese cake

  • Step 1
    In a medium bowl combine strawberries, sugar and red wine vinegar. Cover and refridgerate.
  • Step 2
    In a 350 F preheated oven, spread walnut pieces on parchment paper and roast until fragrant. ( 6-8 minutes) Cool and crush, smash or process nuts until they resemble small - medium crumbs. Add butter, honey, brown sugar and cinnamon. Mix well and press into 6 1-cup dessert bowls.
  • Step 3
    In a mixure, whip the cream cheese, honey, maple syrup, lemon juice, lemon zest, vanilla and sour cream, together until smooth and fluffy.
  • Step 4
    Distribute cream cheese mixture evenly into the dessert bowls. Cover and refridgerate 30 or more minutes. Top strawberries when ready to serve.
