I made this for a challenge for low carb. I do not know if I suceeded.
I still cant get the gist of calculating carbs. Holly be paitent with me please. BUT I must admit the combination of the toasted walnuts, honey and cinnamon is exceptionally tastey and went well with the filling and topping. This is a good dessert for single servings. I would suggest if you want to make a pie use a little non flavored geliton to firm it up more.

Ingredients

  • TOPPING

  • 1 pt
    fresh strawberries, diced to medium pieces
  • 1/4 c
    sugar
  • 1 Tbsp
    red wine vinegar
  • CRUST

  • 1 1/2 c
    walnut pieces
  • 1 Tbsp
    brown sugar
  • 1 Tbsp
    honey
  • 1 tsp
    cinnamon
  • 2 Tbsp
    butter, melted
  • FILLING

  • 8 oz
    cream cheese, softened
  • 1/2 c
    sour cream
  • 1 small
    lemon, zest and juice
  • 1/4 c
    honey
  • 1/4 c
    pure maple syrup
  • 2 tsp
    vanilla

How to Make Individual No Bake Strawberry Cheese Cake

Step-by-Step

  1. In a medium bowl combine strawberries, sugar and red wine vinegar. Cover and refridgerate.
  2. In a 350 F preheated oven, spread walnut pieces on parchment paper and roast until fragrant. ( 6-8 minutes)
    Cool and crush, smash or process nuts until they resemble small - medium crumbs. Add butter, honey, brown sugar and cinnamon. Mix well and press into 6 1-cup dessert bowls.
  3. In a mixure, whip the cream cheese, honey, maple syrup, lemon juice, lemon zest, vanilla and sour cream, together until smooth and fluffy.
  4. Distribute cream cheese mixture evenly into the dessert bowls. Cover and refridgerate 30 or more minutes. Top strawberries when ready to serve.
