The first thing that came to mind was how moist it was, this is chock full of apples, the cinnamon - sugar ribbon that flows through the center of the cake gives this just the right amount of sweetness, not overly sweet but just right. I had it plain , right out of the pan and I was delighted with it! You could adorn this with a drizzle of glaze if you wanted to but it doesn't need it. It's the perfect coffee cake. I put a little bit of whipped cream on the top with a sprinkle of cinnamon. I'm thinking about the Edy's Apple Pie Ice Cream in the freezer with this cake....a match made in heaven.
1In a large mixing bowl, beat 2 cups sugar, oil, eggs, orange juice and vanilla until well blended. Combine the flour, baking powder and salt; gradually beat into sugar mixture until blended.
2Stir in apples. Spread half of the batter into a greased 13-in. x 9-in. baking dish. Combine cinnamon and remaining sugar; sprinkle over batter. Carefully spread remaining batter over the top.
3Bake at 350° for 40-50 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Garnish with whipped cream and additional cinnamon if desired. Yield: 12-15 servings.
