Another family favorite. I'm going through many of my Grams recipes, that my mom finally found...so many, it's hard which ones to make first...LOL! She was an amazing cook! Photo to be added soon! Enjoy!

Ingredients

  • CRUST AND CRUMBLE MIX FOR TOP
  • 1/4 cup butter, softened
  • 1 cup brown sugar
  • 1 1/2 cups shredded coconut
  • 1 cup sifted flour
  • 1/2 teaspoon salt
  • FILLING
  • 1 cup crushed pineapple
  • 3/4 cup sugar
  • 3 tablespoons corn starch
  • 1/4 teaspoon salt
  • 1 tablespoon butter
  • 1 tablespoon lemon juice

How To Make ~ grams pineapple coconut bars ~

  • Step 1
    Preheat oven to 350 degree F. Crust: In a bowl, cream butter and sugar. Mix in remaining ingredients until crumbly. Press half of the mixture into a 9 inch square pan.
  • Step 2
    Filling: In a medium saucepan, combine pineapple, sugar, cornstarch and bring to a boil, cook until thick and clear, about 5 minutes, stirring constantly. Remove from heat and stir in butter and lemon juice, set aside to cool slightly.
  • Step 3
    Spread filling evenly over crust.
  • Step 4
    Spread remaining crumbs evenly over crust. Press crumbs firmly onto filling.
  • Step 5
    Bake for 30 - 35 minutes, or until golden. Cool and enjoy!
